I had wanted to treat my family with something special for the weekend and nothing best than a wholesome and nutritious breakfast to began the day with. It's a simple yet fulfilling meal prepared with some staples and a whole lot of LOVE!
There are 3 different recipes in this post. All of which are super simple, easy to make, and healthy. The best part is it's enjoyed by everyone.
So, we are making -
Roasted Tomatoes
Hash Brown with baked eggs
Easy Omelet
ROASTED TOMATOES
Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes

Ingredients
250 gms cherry tomatoes
2 cloves of garlic
1/2 tsp salt
1 tsp chili flakes
2 tbsp olive oil
Instructions
Preheat the oven to 180 degrees.
Wash the tomatoes well.
In a bowl, grate the garlic and add the salt, chili flakes, and olive oil. Mix well.
Transfer the tomatoes to an ovenproof dish.
Pour the dressing over the tomatoes and place it in the oven.
Let the tomatoes roast for 8-10 minutes or until done.
Serve HOT. Enjoy!
HASH BROWN WITH BAKED EGGS
Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes

Ingredients
For the Hash Brown-
4 medium potatoes (peeled and grated)
1 medium onion ( thinly sliced)
1/2 tsp onion powder
1 tsp black pepper powder
1/2 tsp salt
1/4 cup shredded cheddar cheese
2 tbsp oil
Few chunks of butter
For the Baked Eggs-
5 eggs
Salt and pepper for seasoning
Instructions
Preheat the oven to 180 degrees.
Wash the potatoes. Peel and grate them using a grater.
Take a kitchen towel and add the grated potatoes and the sliced onion to it and squeeze out the moisture. The more you get rid of the moisture the crispier your hash browns.
Transfer it to a bowl and the onion powder, pepper, shredded cheese, salt and mix well. Be gentle while you mix.
Heat oil in a pan and drop the hash brown mixture evenly all around the pan.
Using a flat spatula or your hands spread them smooth.
Let cook for 5 minutes, in the meantime drop chunks of butter around the edges of the hash brown.
Now take a plate and cover the pan to help flip the hash brown safe and steady. Be quick yet gentle.
Then slide it back into the pan and let cook for a few minutes.
Now one by one crack the eggs very carefully as to avoid breaking them.
Season with salt and pepper and straight into the oven.
It hardly takes any time for the eggs to get cooked. It'll be ready in less than a minute.
Transfer to a plate and serve HOT. Enjoy!
Recipe Tip-
If you don’t have an oven, you can make this on the stove top too. Just cover the pan for a few seconds and your eggs would be ready in no time.
Be very gentle when cracking the eggs, one of mine hit hard. It doesn’t matter unless they are cooked well.
EASY OMELETE
Prep Time: 10 Minutes Cook Time: 5 minutes Total Time: 15 minutes

Ingredients
2 eggs beaten
Salt and pepper for seasoning
1 onion chopped
1 green bell pepper
1 red/green chili thinly sliced
Thinly sliced olives
Chopped coriander leaves
Shredded Cheddar cheese
2 bread slices
2 Square cheddar slices
2 tbsp butter
Instructions
Heat butter in a pan.
Beat the eggs well and season with salt and pepper powder.
Pour this egg mix in the pan and keep the flame on medium-high to low.
Sprinkle the chopped onions, followed by the bell pepper, chili, olives, coriander leaves, and finally the cheese.
Cover the pan and allow it to cook for about 30-40 seconds at max.
Get it out on a plate.
In the same pan toast the bread and top with the cheese slice.
Assemble the egg and top with another cheese slice and bread.
Serve HOT and Enjoy!
