Chicken mince is delicious and well loved by the whole family. It's a healthier alternative than the beef mince as its lower in fat. It absorbs the flavors really well and this is just one of the many variations you can have when cooking with chicken mince.

Ingredients
500 gm of chicken mince
1 onion, roughly chopped
1 tsp. cumin powder
1/2 tsp. coriander powder
1/4 tsp. black pepper powder
1 tsp. garam masala
1 tsp. lemon juice
1 cup corn kernels (boiled)
1 cup diced capsicum
2-3 green or red chillies, chopped
4 tbsp. chopped fresh coriander
1 tbsp. chopped fresh mint (optional)
1 tsp. ginger paste
1 tsp. garlic paste
1 tsp. salt
2 tbsp oil
2 tbsp grated cheese (optional)
Instructions
Wash the mince and allow to drain of any excess water.
Heat a pan with oil and add the roughly chopped onion. Saute for a few minutes,we don't want the onion to turn crispy so don't over cook.
Add the mince and fry well until there is not moisture left.
Add the ginger and garlic paste, spices, red chillies, chopped coriander and mint leaves, corn, capsicum, salt and the lemon juice.Mix well n let cook for 20 minutes.
Give it a stir and add the grated cheese at this point and let cook for another 5-10 minutes and your mince is ready. It’s going to be creamy and delicious. ENJOY !
TIPS
Mince doesn't take long to cook.Over cooking would make it too dry .
This particular recipe can be used as a filling for your puff pastry, samosa, or it can even go well with tacos and anything that you think is suitable for/with.
One more interesting tip would be to add a little smokey flavor to this simple yet very flavorful recipe. Once the mince is ready you can give the smokey effect. This is how its done -
Place a lit coal on a piece of foil and placing it in the middle of the bowl holding the mixture. Then drop a bit of oil on the coal and cover the bowl for 2 minutes to retain the smoke in the bowl for the mixture to absorb it. Once done, discard the coal.
This give a whole new BBQ-styled flavor to the dish and enhances the tastes.
