This Quinoa salad is refreshing, crisp, nutritious & delicious. It's made of fresh veggies like broccoli, bell peppers, spring onion greens, avocado - and a nice spiced dressing to add flavor to this absolute summer Salad.
This salad is super simple and you can actually make it in just a few minutes, also add in extra veggies of your choice to make it more desirable to your tastebuds.
THE DRESSING-
The dressing for the salad is made of honey, lemon juice and zest, salt, and pepper, olive oil, and ginger. Ginger adds a spiced touch to the salad and lifts up the whole dish. I know most of us are not fans of ginger, but its highly beneficial, So go for the sake of the benefits, give it a go - & Olive oil is like medicine to your heart and soul. So be generous with that too -
Let's get into the making -
QUINOA SALAD

Ingredients
For the Dressing-
50 ml of olive oil
lemon zest, of 2 lemons
lemon juice, of 2 lemons
1 tablespoon(s) honey
salt
pepper
20 g ginger, fresh, grated
For the Salad-
180 g quinoa
1 spring onion, finely chopped
1 yellow bell pepper
1 red bell pepper
100 g broccoli, in florets
1 avocado(s), ripe
Instructions
Fill a bowl with cold water and add the quinoa.
Let it soak for 5 minutes.
Transfer to a strainer and discard the water.
Quinoa has a natural coating that can make it bitter. This is removed when soaked in water and rinsed.
Transfer to a pot and add 1 liter of water. Place the pot over heat and bring to a boil. Let it cook for 15-20 minutes. Do not over boil.
While the quinoa is cooking, prepare the salad dressing and the rest of the salad.
In a bowl, add the olive oil, lemon zest, lemon juice, honey, and ginger. Whisk.
Add the spring onions, yellow pepper, red pepper, broccoli florets, and avocado. Mix.
When the quinoa is ready, drain and rinse to cool it off so that you can add it to the salad.
Drain and add to the bowl. Toss.
Season to taste and serve.
