Let’s step in the kitchen and get to the making of these beautiful, admirable, healthy Peanut Bites. But before we start with the making, let me talk you into a few things you’d want to be prepared with -
1. Get your peanuts coarsely grounded because that’s how we’ll be needing them for our recipe.
2. Secondly, while we work with the peanuts you can get your chocolate to melt so it’s ready in time for use.
3. Keep your piping bag ready or make a cone for piping our white chocolate for the top layer but don’t melt your white chocolate yet. We can start melting the white chocolate when we are done with the bottom layer of the bites.
Below, is the accurate recipe measurement,
HEALTHY PEANUT BARS
Prep time: 30 minutes
Yields: 40-60 bites
Author: Aaisha
Ingredients
1 kg roasted peanuts (grounded coarsely)
1 tbsp cinnamon powder
1/2 cup honey ( more if desired)
Pinch of salt (optional)
100 gm white chocolate
700 gm milk/dark chocolate
Instructions
Step 1-
Ground the peanuts coarsely.
In a bowl add the ground peanuts, cinnamon powder, pinch of salt, and honey and start to mix this mixture with your hands. Sometimes you’ve no substitute for your beautifully-useful-hands 😇.
Work gently. Add more honey if required to get the mixture together.
In a tray, empty this mixture and form a perfect rectangular shape. Make sure your mixture is at least 2 inches thick so as to get a good generous bite on the peanuts.
Step 2-
Keep your dark/milk chocolate for melting over a double boiler or put it in the microwave.
For an easy and quick melt, chopping the squares into tiny chunks would work better.
Once the chocolate is melted and is silky smooth, let cook down for a minute or two.
Now pour the chocolate over the peanut slab gently to cover the slab evenly.
Let dry. Now hold your breath and carefully and gently flip the slab over.
Repeat the same step of pouring the dark/milk chocolate over and cover the slab evenly.
At this point, we don’t have to wait for the chocolate to dry because now you’ll start making vertical/horizontal lines with the white chocolate over the dark/milk chocolate.
Using a toothpick or a clean knife cut through the white chocolate and keep going in the to-&-fro (backward & forwards) motion till the end and you’ll have a beautiful pattern on your slab. Wait until it dries out.
Now it’s ready to cut into diamond-shaped pieces. Or you can have them in whatever shapes you like, nothing hard and fast.
Recipe Tip
If you are not using salted peanuts then adding salt would be a great idea. Because I used salted peanuts so I omit the salt as I didn’t want to overpower the saltiness.
Storage Tips
Store in an airtight container.
Can stay good at room temperature for more than a week and in the fridge for over a month.
Hope you enjoy making this delicious and healthy snacking and enjoy with your friends and family.
