Super moist and juicy Chicken skewers make up for an amazing appetizer. It’s a favorite among the kids. It was a last minute call. I had the chicken breast and was thinking on what I could make that’s going to be easy, quick and give us all the joy when it’s ready to have. Well Chicken Skewers it was then! And they were super moist, juicy and so delicious.
Chicken skewers can be served with Humus, garlic sauce, any herbed relish or even flavored rice. It is completely satisfying.
What goes in the making of these Chicken Skewere?
For making this chicken skewers , Chicken is the hero and the rest is the spices that contribUte in its marinade to add a touch of deep flavor to it. Cut the chicken breast into strips or cubes as per your preference. I went with the strips. In a bowl make the marinade with olive oil, tandoori masala, salt, lemon juice and yogurt. Marinade the chicken in this mix and leave aside for an hour or more depending upon how much time you have on hand. For me it was a last minute call so I barely had much time. I gave it an approximate of 30-40 minutes of resting time.
Skewer the Chicken
This can be done just before serving. When you are getting ready for dinner all you need to do is thread the chicken on the skewers and place it in the oven for about 20-25 minutes. It shouldn’t be more than that.
And there we go - Our Tender Chicken Skewers are ready to go!
TANDOORI CHICKEN SKEWERS

Ingredients
500 gm chicken breast
1 tbsp ginger garlic paste
1 1/2 tbsp Tandoori masala powder
1/2 cup yoghurt
Juice of 1 lemon
2 tbsp olive oil
1 capsicum ( cut into cubes - optional)
1/2 tsp salt ( or less)
Instructions
Preheat the oven to 180•c . Combine the olive oil, spices , yogurt, salt, lemon juice and the ginger garlic paste in a bowl. Cut the chicken into cubes or long strips and add to the marinade bowl and mix well until it’s well coated. Rest for a couple of hours.
If using wooden skewers, soak them in water while the chicken is marinating. I prefer stainless steel skewers, but if I'm using the wooden ones, I like to soak them in water before getting them to use.
Thread the chicken on the skewers leaving space at the end for holding it. You can skewer capsicum, or tomatoes along the skewered chicken. Grill the chicken for 20-25 minutes (depends upon your oven, can take even lesser time, I.e 15-20 minutes), or until the chicken is just firm to touch. Turn the chicken occasionally and baste with olive oil .
If chicken seems to be sticking, or loose when you try to turn it, it's not ready to turn yet. Just wait a little longer and it should release freely.
Garnish with fresh herbs if desired. Enjoy!

Be careful not to overcook chicken as it will get dry and tough.
