Chicken croquettes are always pretty on the dinner/Iftar table, especially when you have guests. These are little balls of ground chicken and stuffed with cheese, coated in breadcrumbs, then shallow fried until crisp and golden. Croquettes are also called chicken balls.

Talking about Croquettes, who doesn’t love them!? These are a treat to the taste buds & so addictive. Burst of cheese when you bite through them& you can’t stop by just having 1-2 of them. & more over if they can be prepared with just minimal ingredients & maximum flavor, nothing better then that!
Today I am sharing with you one such tempting, finger licking, addictive & so cheesy recipe of our most favorite snacking- The Chicken & Cheese Croquettes.
Simple to prepare, nothing fancy & no hassle cooking required.
You can even prep these ahead of time & freeze them for later use. They stay just perfect for months.

To prepare these croquettes you’ll need boneless chicken breast & cheese. & you are good to go. How simple is that? 😃
You can also use chicken mince to make these Croquettes. I prefer to ground my chicken breast & getting to a coarse paste to make the croquettes. I am using burger 🍔 cheese 🧀 for the filling, you can use your choice of cheese.
WHY MAKE THESE CROQUETTES
These are simple and easy to make, and yet, very impressive to serve.
You can make these ahead of time and fry them just before serving. Or, you can make all the components and put it all together an hour before you are ready to serve.
There are only two components to these croquettes:
Meat - you can use ground chicken or beef or even make it from scratch. You can use leftover chicken if you have any. All you do is shred the chicken, either with a fork or in the food processor. It can be made up to 2 days ahead of time and stored in the fridge.
Cheese-stuffed - this is, of course, optional. You can make the classic way, or stuff it with some cheese for a modern twist.
Here is the recipe for - Chicken & Cheese Croquettes/kebabs
CHICKEN & CHEESE CROQUETTES
(Yields- 25-30)
Ingredients-
850 g chicken breast
2 tbsp ginger/garlic/green chili paste
Spices
1 tbsp each-
Black pepper powder
Lemon pepper powder
Chicken spice powder
Aromat
1 tsp salt
1 tbsp oil
Cheese for filling/stuffing
Coating-
Eggs
Breadcrumbs
Instructions-
Ground the chicken breast into a coarse paste.
Add the ginger/garlic/green chili paste & the spice mix and whizz again to get all the ingredients well combined.
Get the mixture in a bowl and add 1 tbsp of oil. Mix it well.
Shape them into a circle and flatten it using the finger to dig a tiny hole to fit the cheese in.
Stuff it with cheese ( i am using burger cheese). Now seal it & reshape it.
Finally dip the croquettes in the egg and coat with breadcrumbs.
Deep fry or shallow fry and serve with ketchup or any of your favorite sauce.

USEFUL TIP :
You can even store it for a week or 2 in the freezer and use it as and when needed.
Remove them half an hour before frying.
Notes-
I added a tablespoon of oil to the mixture to avoid the sticky mess while shaping the croquettes. If you don't want to add oil, it's perfectly fine but then you'll have to oil the palm of your hand when shaping the croquettes. & I some how find that a little messy. Hence, i add oil to the mix to avoid all the mess. :)
The Mixture helps yields a good 25-30 croquettes. :)
