INSTANT RAMEN NOODLES MADE HEALTHY | CHICKEN NOODLES

Instant Ramen With a whole lot of yummy goodness

Ramen is an easy and quick meal. All it takes is 20-25 minutes and you have prepared a meal for yourself and your loved ones. These Ramen can be simple in taste and cooking, But to add a little bit more flavor to this simple dish, you need a few extra ingredients and it lifts the whole dish to another level.


We’ve to be creative in making this a game-changer. Once you try variations to this simple fried noodles, and never want to go back to having them just by themselves. A pinch of yum is worth the hustle.

You’ll come across varied ways of turning this super easy and simple recipe to a flavorful meal. Today I’ll share one of the many ways I work with these simple fried noodles.


Cherry tomatoes | Other veggies


I have used minimal veggies as I wanted them to stand out in flavor and texture. You can use mixed veggies cut into julienne. I used green and yellow bell peppers.

Cherry tomatoes are totally optional. You can omit them if you want. I like tomatoes and more when they are grilled.

All I did was slice them into halves, add a crushed garlic clove, sprinkle some salt, and drizzle with olive oil and throw in the preheated oven and grill on the upper flame for around 10-12 minutes. Take them out once done and keep it aside. They’ll be used only when the noodles are ready to serve.



Sweet soya Or Dark soya sauce?


Soya sauce is a key ingredient. Adjust the flavors of the sweet soya sauce and the spice mix that comes along with the pack. I alter the sweet soya to the dark and add few more spices to it, As I don’t want any sweetness in my dish.


Vinegar Or Lemon juice


You can add either of the two. I have used lemon juice here as I wanted a light tangy flavor of the lemon.

Adding vegetables to your noodles improves the texture of the dish and makes it more wholesome and healthy. You can leave it with just veggies or for more flavor add chicken to it. Even if you have any leftover chicken from the other day you can use it. You don’t need any sides to go with it, it’s a complete meal on its own.


How to cook Noodles?


  • Follow the instructions on the package of whatever type you use. Add salt 🧂 to the water when boiling. Sometimes it doesn’t require that too.

  • Let the water boil and then throw in the noodles and cook for about a minute and a half maximum. The cook time varies depending upon the noodle type used.

  • DO NOT OVERCOOK THE NOODLE! This is very important because they will turn mushy and will cause trouble when you start cooking them.

  • Drain and rinse under cold water. You can add a spoonful of oil to the noodles as it helps them to stay apart and not stick together.

Chicken Noodles | Instant Chicken Ramen

Ingredients

  • 4 packs of Instant Noodles

  • 2 big capsicums thinly sliced

  • A handful of cherry tomatoes (optional)

  • 1 bunch of spring onion ( the white and the greens separate)

  • 2 tbsp of finely chopped ginger

  • 4-5 cloves of finely chopped Garlic

  • 2 green chilies chopped

  • 1/2 tsp chili flakes

  • 1/2 tsp lemon pepper powder

  • 1/2 tsp chicken spice powder

  • 1/2 tsp black pepper powder

  • 200 gm of chicken ( cooked and shredded)

  • 1/2 tsp of Salt

  • Juice of 1/2 lemon

  • 1 tbsp of dark soya sauce

  • 2 tbsp of oil


Instructions

Cooking the noodles

  1. Boil water to a boil.

  2. Add the noodles and follow the instructions on the pack for cook time. Don’t overcook as they will turn mushy.

  3. Drain under cold water. Add a spoonful of oil to the noodles and set aside.

Making the chicken and Veggie Noodles

  1. Add oil to the pan and keep the flame on high. (Also use the flavored oil that comes along with the noodle packet)

  2. Sauté the ginger, garlic, green chili, and chili flakes for a minute.

  3. Add the green onion and saute.

  4. Now add the capsicum and give it a mix.

  5. When half done add the shredded chicken and the spices, dark soya sauce, and lemon juice.

  6. Finally, add the cooked noodles and toss and stir fry for a minute.

  7. Sprinkle the greens and the grilled cherry tomatoes on top and serve hot or warm.
