
Seafood Special Lunch Combo

In today’s blog, there’s not one, or two but 3 different recipes, all of which are complementing to the other. Cooked and served in just an Hour! Yes, You read that just rightly.
Good food in just no time and with best results is something we all want. Keeping in mind the daily chores and how to make life simpler is the need for the home makers.
The weekends are usually the most busiest, & to get some time off with a quick wrap on my kitchen is something to look forward too. & with this combo meal I was actually able to pull this off really well. It was quick, it was simple & it was undoubtedly satisfyingly good.
Being a mum of three, & keeping in mind their choice and preferences when it comes to food is yet another most important task. So, with all that on my mind I made this seafood special lunch which suited everyone’s taste buds quite good. It was a comforting & satisfying meal experience.
I reckon you should give it a try. Especially the Rice! & why is that?
To be honest, it was my very 1st attempt in cooking rice in the oven. But the results blew me up! Because when it comes to rice, the proportion of water to rice is very crucial. More water can turn your rice mushy. Less water can leave your rice partially uncooked.

So, to be on the sure/safer side, follow the exact measurements listed on the recipe corner and hopefully you’ll have the same results as I did.
For the Fish, I used ‘King Fish’. Skinless and boneless as my family prefers it this way.
Fish cooks faster so keep a watch once you place it in the oven. Put the timer for 10-12 minutes, turning once after 5 minutes. I have used both lower and upper flames to cook the fish.
For the prawns, I used tiger prawns with skin on. Deveined and cleaned well.
Prawns were cooked on the upper flame for around 8 minutes, turning once after 4-5 minutes. Don’t over cook them as they would loose the crunch and become hard and that’s not what we want.
So, the post is getting longer than expected. No more tales to tell. Straight on to the recipe.

BAKED KING FISH
Prep Time: 5 minutes Cook Times: 10 minutes Total Time: 15 minutes

Ingredients
6-7 boneless Fish pieces
1 tbsp chopped garlic
1 tsp paprika powder
1 1/2 tsp chili powder
1 1/2 tsp salt
Chopped cilantro
Juice of 1 lemon
1/4 cup of oil
Water to dilute the mix
Instructions
In a mixing bowl add the chopped garlic, paprika, chili powder, salt, cilantro, lemon juice, and oil and stir to mix.
When the mixture is smooth add a little water to dilute the mixture and make it runny. Not too runny.
Drizzle the mixture over the fish and let it rest for an hour or more.
Bake in a preheated oven(180 degrees) for 10-12 minutes, turning in between after 5 minutes.
Serve Hot with rice.

OVEN COOKED TIGER PRAWNS
Prep Time: 5 minutes Cook Time: 8 minutes Total Time: 13 minutes

Ingredients
1 kg Tiger Prawns with skin
2 1/2 tbsp chopped garlic
1 tbsp (4) green chilies
1 tsp black pepper powder
1 1/2 tsp salt
Juice of 2 lemons
Chopped coriander
3-4 tbsp oil
1 lemon thinly sliced
Instructions
In a large bowl add the prawns.
Add the chopped garlic and green chilies.
Add the black pepper powder, salt, lemon juice, coriander leaves, oil and the lemon slices. Give it a good stir.
Let the prawns marinate for a couple of hours before cooking.
Line the prawns in an oven proof tray and bake in a preheated oven for about 8-10 minutes turning once after 4 minutes.
Don’t over cook them.
Serve Hot! & Enjoy.

SAFFRON FLAVORED RICE
Prep Time: 10 minutes Cook Time: 45 minutes Total Time: 55 minutes

Ingredients
3 cups rice
1 cinnamon stick
3 green & 2 black cardamom
1 tsp coriander seeds
1 tsp black pepper seeds
1 tsp cumin seeds
1/4 tsp cardamom powder
A generous pinch of Saffron
2 1/2 tsp salt
2 dry lemons
2-3 bay leaves
4 green chilies
4 1/2 cups of water
1/4 cup of oil
Instructions
In an oven proof tray add the washed rice.
Now add in all the above mentioned ingredients.
Pour water and give it all a mix.
Cover the tray with foil. (Seal the sides well)
Cook the rice in a preheated oven for 45 minutes.
Once done take it out of the oven and let cool before serving.
Enjoy with any of your favorite choices of main course.
This rice is very fragrant and flavorful. It goes very well with any of the seafood or chicken or meat. Enjoy it with your best choices.
