This is my third try in a row in three consecutive days with three different recipes. You read it just right! I wasn't pleased with my earlier two trials of this beautiful looking and delicious tasting cookie, so I kept trying until I got what I was looking for. And finally the third time, it hit the mark. The cookies charmed me at the end of the day.
In my earlier two trials, I had used almond flour and the third recipe called for oatmeal and I got lucky this time. We have simple ingredients going in this recipe and its super quick cooking. These cookies are ready in about 6-8 minutes depending upon your oven.
When the mixture/cookie batter is ready to bake, this is the crucial part here, drop a scant teaspoon on the baking sheet and you've got to leave 2-3 inch space between them because these spreads a lot and that's how they get the lacey look we adore them for. While the cookie bakes it spreads and bubbles and bubbles and forms little holes in the cookie. You'll have to keep working them in batches, might be a long queue outside your oven but the wait is worth it.
When the edges have turned golden brown that's when you know they are perfectly done. Get them out of the oven, leave them for at least 5 minutes before you transfer them to the cooling rack. They'll still be soft and you can mold them easily into any shape you desire, like a cone or a taco if you prefer to have them as a sandwich.

OATMEAL LACE COOKIES

Ingredients
½ cup butter
¾ cup white sugar
1 egg, beaten
1 cup quick-cooking oats (such as Quaker™)
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon baking powder
1/2 teaspoon of orange zest (optional)
Instructions
Preheat the oven to 350 degrees F (175 degrees C).
Melt butter in a microwave-safe bowl in a microwave. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla extract, salt, baking powder and orange zest.
Drop a scant teaspoon of dough onto the prepared baking sheet, leaving at least 2 inches between each cookie to allow them to spread.
Bake for 6-8 minutes, watching closely to prevent them from over-baking. The lace cookies should be golden brown.
Bake in the preheated oven until edges are golden brown, about 8 minutes. Let cool completely before removing cookies from the baking tray.
Store in an airtight container. Enjoy!
Recipe Notes -
Orange zest is totally optional. I like the zesty part and moreover the pinch of orange flavor in the cakes or cookies is an add on. Make sure to leave enough space between the cookies so it doesn’t gets over crowded.
Tips For Storing These Cookies:
Cool the baked cookies thoroughly. Layer cookies between pieces of parchment or waxed paper and place it into an airtight container. These cookies should keep up to 1 week.
