Sabudana also is known as Sago Pearls or Tapioca Pearls. It is made from Tapioca root also known as Cassava. sabudana kheer is a creamy and delightfully delicious pudding. Mostly made during the fasting season.
Sabudana kheer is refreshing and an instant energy booster. IT's mostly liked by everyone. Though it's bland in taste, Yet we savor it with the addition of spices and sweeteners.
kheers/Puddings mostly call for an occasion. But it shouldn't be the case. As it is super easy to make this relishing dessert. It's very kiddo-friendly because of PEARL-BALLS.
To make this sabudana kheer, we have to rinse and soak the sabudana for a few hours.
You can use sugar or jaggery as the sweetener and flavor with cardamom powder and strands of saffron.

SAGO PEARLS/SABUDANA KHEER

INGREDIENTS
1-liter Full cream milk
1/2 cup Sabudana(soaked in water)
15-20 strands Kesar
1/2 tsp Cardamom powder
1/4 cup Sugar
INSTRUCTIONS
Wash and soak sabudana in 1/2 cup water for 4-5 hours.
Heat milk in a heavy bottom pan.
When the milk comes to a boil, add the soaked sabudana.
Simmer the heat and let the kheer cook till it gets thick and the sabudana are cooked. ( approx 40 minutes).
Keep stirring in between.
Add the saffron and cardamom powder. Allow cooking.
Add sugar and mix.
Add coarsely ground Almonds and Pistachios. Leave some for garnish.
Serve hot or chilled.
RECIPE NOTES
I have used coarsely ground dry fruits because my kids don't like it when they get them in the mouth while eating. So I figured to ground and add as they won't realize it and they also get the goodness from these dry fruits.
You can very well add finely sliced almonds and pistachios as desired.
