MOROCCAN CHICKEN

You and I think we’ve had it all when it comes to cooking, but let me tell you this is something that’s so subtle yet so delicious and satisfying. And you’re definitely going to make it again because I know I’ll 😀! This Moroccan Chicken is a one-pot meal, you can use only the thighs of the chicken or the whole chicken as I did, green olives, some raisins, spices, and herbs.

It’s got the simple ingredients fully packed with flavor that you can have it all by itself. You won’t need a thing to go with it

That's how good it is. Believe me-



You’ll need a chicken cut in four pieces or you can have it in the medium pieces too, it’s fine. Some spices like cinnamon powder, black pepper, garlic, onion, salt, chili flakes, coriander seeds, and turmeric powder.


We need to take whole spices and in the pestle and mortar ground it well. The smell of these freshly ground spices is just beautiful.


You can make this chicken on the stovetop or in the oven, whatever suits you best. I used the stovetop and it was ready in 35-40 minutes of slow cooking.

MOROCCAN CHICKEN

Ingredients

  • 1 cup homemade tomato juice

  • 800g chicken

  • 100g dried apricots (optional)

  • 1 tsp. coriander seeds

  • 5-10 garlic cloves

  • 1 cinnamon stick/powder

  • 2-3 big onions

  • 1 tbsp. cumin

  • ½ tsp. salt

  • ½ tsp. pepper

  • 1 tsp. chili flakes

  • 1 tbsp. turmeric powder

  • chopped parsley


Instructions

  1. Grind in the mortar 1 cinnamon stick using a pestle.

  2. Add ½ tsp. of salt, 1 tsp. of coriander seeds, 1 tbsp. of cumin, ½ tsp. of pepper, 1 tsp. of chili flakes and 1 tbsp. of turmeric. Grind well using pestle!

  3. Unpeel and slice 2-3 big onions.

  4. Smash and chop 5-10 garlic cloves.

  5. Coat 500g of chicken thighs in the spice mix.

  6. Heat oil in a pan.

  7. Put the chicken into the pan. Fry until ready, do not forget to flip halfway.

  8. Add onions and garlic. Stir & fry until onions are crispy golden brown.

  9. Warm 1 cup of homemade tomato juice in the pan then transfer it to the cooking pan.

  10. Mix chicken with tomato juice well.

  11. Add the remaining spice mix. Mix well everything again.

  12. Cover with a lid and slow cook for 30-40 minutes. When it’s almost ready add 100g of dried apricots. Slow cook a little more.

  13. Finish off with a handful of chopped parsley and serve!

Recipe Notes-

  • You can use cinnamon powder instead of the stick. Add it with the other spices and mix along well.

  • You can make this recipe with the chicken thighs also.
