WHOLE ROASTED CHICKEN!

This is a simple yet full of flavor roasted chicken. A one pot meal best suited for family dinners. Goes best with some roasted potatoes, hummus or Tzatziki Sauce. Flavorful, complete food and absolutely satisfying.


As simple as it is to cook this there are a few tips and tricks to be wary of when making a one pot meal.


Some key points-

  • Make sure your chicken is completely dried as better the dry the crispy the skin would be.

  • Try to tie the chicken legs together as this gives an even cooking to the whole chicken as it keeps them closer to the body.

  • DO baste the chicken every 15 to 20 minutes. Basting is the real secret to roast chicken success.

  • Don’t dig in the chicken immediately after removing it from the oven. Let it rest for a few minutes so the juices collect and the chicken remains moist.


While making the recipe- you can always adjust the seasoning accordingly. For less heat, skip the extra chilies added while marinating.

WHOLE ROASTED CHICKEN

Ingredients

Marinade-

  • 2 whole chicken with skin

  • 2 lime zest

  • Juice of two limes

  • 1/4 cup of oil

  • 2 chicken stock cubes

  • Handful of coriander leaves

  • 4 green chilies

  • 1 bundle of garlic 🧄

  • 1 tsp of paprika

  • 1 tsp cumin powder

  • 1/2 tsp garam masala powder

  • 1 tsp salt


Roasting-

  • 12-15 crushed garlic cloves

  • 3-4 green chilies

  • Cherry tomatoes (optional)

  • Fresh herbs


Instructions-

  1. In a blender - add all the ingredients of the marinade and pulse it until mixture is slightly coarse.

  2. In a baking tray - align the chicken and pour the marinade over them.

  3. Coat the chickens well with the marinade in and out rubbing throughout.(including inside the cavity).

  4. Add more green chilies and crushed garlic.

  5. Cover and let sit for a few hours or probably overnight.

  6. Preheat oven to 180•c.

  7. Roast the chicken for about 1 hour, basting it every 15 minutes by using a spoon and tilting the pan to collect the juices then spooning them atop the chicken.

  8. Rotate the pan every time you baste the chicken to guarantee even cooking.

  9. When the chicken is cooked through and the skin is crispy, let it out of the oven.

  10. Allow the chicken to rest for 10 minutes before slicing and serving.

  11. Enjoy this delicious roasted crispy skin chicken!

The total cooking time will depend on a variety of factors, including the weight of your chicken and how heat circulates within your specific oven.
